This month's recipes include Cherry Good Cake and Cherry Chicken Fajitas.
Cherry Good Cake
Makes 10 servings
- 1 3/4 cups all-purpose flour
- 1/3 cup toasted wheat germ
- 3/4 cup granulated sugar
- 1/2 cup butter or margarine
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2/3 cup buttermilk
- 1/4 cup egg substitute
- 1/2 teaspoon vanilla
- 1 (20-ounce can) light cherry pie filling
Instructions:
Stir together flour, wheat germ and sugar in a large mixing bowl. Cut in butter until pieces are peas size.
Reserve 1/3 cup of flour mixture for topping. Stir baking powder and baking soda into remaining flower mixture. Add buttermilk, egg substitute and vanilla. Stir just until moistened.
Spray a 12x8x2 inch baking dish with nonstick spray. Spread batter in baking dish. Spread cherry pie filling over batter. Sprinkle with reserved crumb mixture. Bake in a preheated 350 degree oven 45 to 50 minutes, or until a wooded toothpick inserted in center comes out clean. Serve warm.
Cherry Chicken Fajitas
A south-of-the-border treat with a tangy twist
- 2 cups individually quick frozen red tart cherries
- 1 cup frozen corn
- 2 1/2 cups shredded lettuce
- 1 pound boneless, skinless chicken breasts
- 1 cup shredded light cheddar cheese
- 1/3 cup sour cream
- 8 flour tortillas
Instructions:
Thaw cherries and corn, drain well. Cut chicken into strips; saute in a large skillet coated with nonstick spray.
In another skillet, coated with nonstick spray, cook cherries and corn until hot, draining well after cooking.
For each fajita, spread 2 teaspoons sour cream on one-half of each tortilla. Divide lettuce, cheese, chicken and cherry-corn mixture into eighths. Put a portion of each on each tortilla. Roll tortilla into a cylinder. Serve immediately.
