This month's recipes include Sue's Frozen Maple Cherry Salad and Honey-Hot Pepper Chicken with Citrus Chutney.
Sue's Frozen Maple Cherry Salad
- 1 cup pure maple syrup
- 1 (8 oz.) package cream cheese, softened
- 1 1/2 cups frozen sweetened red tart cherries
- 1 cup crushed pineapple, drained
- 1 cup dates, chopped
- 1 cup nuts, chopped
- 2 cups whipped topping
Instructions:
Beat syrup and cheese until well blended and smooth. Fold in remaining ingredients.
Pour into oiled mold and freeze. Unmold and garnish with cherries set on dabs of whipped toppings.
Honey-Hot Pepper Chicken with Citrus Chutney
Makes 4 servings
Citrus Chutney
- 2-3 Florida oranges, cut into sixths
- 2 pints Florida grapefruit, cut into sixths
- 1 pineapple, cut into spears
- pinches of curry, minced garlic, cinnamon, ground cloves, salt and cayenne pepper
Honey-Pepper Chicken
- 1 hot pepper, seeded
- 3 tablespoons honey
- 1 1/2 teaspoon black pepper
- 4 boneless, skinless breast halves
Instructions:
Cut fruit into small pieces, simmer 10 minutes.
Chop pepper finely and stir in honey and black pepper. Rub this mixture over chicken breasts and roast them about 15 minutes at 450 degrees.
Finish off in a broiler if not browned. Serve with chutney. Garnish with oranges and grapefruit.
